…wines, all of which will be released in 2014 beginning with the Pintia 2010 from the Toro region. The goal, Xavier says, is to make the "most elegant wine in a rustic region." …grapes for Melchor comes from the Puente Alto vineyard (closest of the Toro vineyards to the Andes) with volcanic soils, which are poor soils with great drainage, it's the "key to the wine", say Enrique. There is also great diurnal temperature in that vineyard: 28-29 degrees during the day - and drops to 8-10 degrees at night, "this helps to keep good acidity in the grapes." The vines are 25-30 years old ... of the 127 hectares 90% is Cabernet Sauvignon while …

Tasting them colder than that will just difficult the tasting as they need to open so we can perceive their aroma, their evolution in the mouth and so on. So, please pay attention to the Celsius, especially when the wine is good.

Between 11 and 16 º C : when we talk about red wines with less body and more prominent in their fruit character such as Zinfandel

El Picaro means the cheeky one or the rascal, and the wine reflects its name. A young wine with 6 weeks in French oak to round it out a little, it's made from 90 year old Tinta de Toro ( Tempranillo) vines. Fermented in temperature controlled large format concrete tanks, to retain freshness and vibrancy. It [...]
