Ruby menu since it open in 2007. It's a Manhattan riff featuring 2 parts Talisker Scotch, 1 part Pedro Ximinez sherry and a dash of Richard, which is used like bitters in this case. It's a simple, silky, sweet drink, but complex in taste. The ingredients almost war with one another, but stop just short. Instead, you get an ever-intriguing interplay of flavors.

I preferred my second choice, the 866, an on-the-rocks sipper made up Dild Aquavit, Campari, Grapefruit juice

Talisker 10 yr old - another fairly peaty whisky - a little smoother than the Langavulin - with some pleasant honey notes and more rounded flavour.

From there we ventured off into the wilderness and eventually found the Highland Park stand.

Highland Park 18 yr old - a cut above the 12yr old and incredibly smooth and rich (and pricey too)

Not sure where to go next we consulted the handy guide book (which lists and describes every whisky) and decided to find some more mellow whiskies. …

I often tell people that I am never caught at home without a Talisker and a Highland Park in the cupboard. The Talisker because in my opinion it is one of the best balanced whiskies in terms of wood malt & peat and the Highland Park because you can taste the heather. Apart from those two if I am with friends up in the Highlands fly fishing then I'll always look for a Laphroaig, something like the latest 18yo release would be just beaut. Then of course first thing in the morning …
